Is it just me, or does this quarantine make you feel like it is happy hour all day every day? Tonight, my boyfriend’s mom, whipped up some delicious fish tacos with a fresh mango salsa so I thought it was fitting to through a little margarita into the mix. I love the freshness of a Paloma (tequila + lime + grapefruit) and love the frothiness of a shaken margarita, so I mixed the two up to bring you a Grapefruit Margarita (with a touch a mint.)
In the recipe, I used all fresh juice, but you can use store-bought goods. With everything going on right now, make sure all your fruit is cleaned (soap + water) before putting it anywhere near your mouth or nose!

⌁ 1 cup grapefruit juice
⌁ Zest of 1 grapefruit
⌁ 1/2 cup of sugar
⌁ 2 T. lemon juice
⌁ 2 oz. tequila
⌁ 2 oz. triple sec
⌁ 2 oz. lime juice
⌁ 2 oz. grapefruit syrup
⌁ 1 oz. grapefruit juice
⌁ Sprig of mint
GRAPEFRUIT SYRUP
⌁ In a small saucepan, mix sugar + 1 cup grapefruit juice + grapefruit zest + lemon juice
⌁ Bring to a boil; Once boiling, reduce heat and simmer for 5 minutes
⌁ Transfer to an airtight container and stick in fridge to cool
MARGARITA
⌁ Rim glass with sugar + salt + chili powder (for some spice)
⌁ Fill shaker will crushed ice
⌁ Add tequila + triple sec + lime juice + grapefruit sugar + grapefruit juice + mint
⌁ Shake vigorously for 30 seconds
⌁ Strain contents over crushed ice glass
⌁ Garnish with mint sprig and lime wheel – ENJOY!
