Shrimp & Scallop Cake Recipe

shrimp and scallop cakes


ingredients / da cakes:

⌁ 4 asparagus spears

⌁ 4 T. unsalted butter

⌁ 2/3 cup chopped shallots

⌁ 1 lb. uncooked med. shrimp, finely chopped

⌁ 1/2 lb. scallops, finely chopped

⌁ 1 1/2 cups bread crumbs

⌁ 1 cup diced red pepper

⌁ 2 eggs, beaten

⌁ 1/4 cup chopped chives

ingredients / da VINAIGRETTE:

⌁ 1 cup olive oil

⌁ 2/3 cup chopped chives

⌁ 1/4 cup lemon juice

3 T. finely chopped shallots

 

directions / da cakes:

⌁ Cook asparagus, drain and refresh under colder water – finely dice – transfer to bowl.

⌁ Melt 2T butter in skillet – add shallots and sauté 2 minutes – add to asparagus bowl –

mix finely chopped shrimp and scallops
